Take them to small claims court. I'd bet that you could get the $1,100 (approx. 800 Euros) for the hotel but not sure about the difference in JetBlue airfare since they did offer you a voucher, but you were just holding a grudge against them after they admitted error.

There's a gas station I was at recently in CT (I want to say Valero?) that had a sticker on the pump that said $0.45 federal taxes, $0.30 state taxes (I just made up those numbers) so I don't think it's illegial. They didn't advertise it on any signage or anything, just a 2" by 2" sticker next to the keypad.
