Here's something sort of weird. The St. Louis Post-Dispatch is saying that two products, "Aunt Jemima Complete Pancake Mix" and "Aunt Jemima Buttermilk Complete Pancake Mix" have been "recalled and are under investigation for a possible health risk, according to a press release given out by Dierbergs grocery stores."
Attempts by Consumerist to locate this press release failed, as it seems to have been taken off the store's website. Pepsico, parent company of Quaker Oats, also had no information about the recall. Same with the FDA. So what's up with the pancake mix?
Quaker Oats Company said they could not yet say exactly what is wrong with the mixes.How very mysterious! Customers in need of more information (that would be all of you, actually) can contact the Quaker Oats Company directly at 1-800-407-2247."We are currrently working with regulators on what we can say," spokeswoman Candace Mueller said this afternoon.
Schnucks said Quaker Oats said only that, "there is a potential health risk associated" with the recalled products.

If *I* can cook pancakes from scratch, so can anyone.
Here you go:
Ingredients:
1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 tbsp sugar or honey
3 tbsp butter (melted)
1 1/2 cups milk
1 egg
Mix the dry ingredients together.
Add milk, butter, and egg (and honey, if you go that route) and mix. If it's too doughy, add a touch more milk until it can pour easily.
Pour onto lightly-oiled pan on medium-low heat.
Flip over when it stops bubbling.
Pull off after a minute or so on the other side.
Enjoy!
So these are only the Complete mixes, which are the ones where you just add water, right? Thank goodness I'm not too lazy to add milk and an egg! (Although I'd totally buy the Complete kind if I knew it would taste as good as regular. Never had it.)
2 years ago they had a recall due to inaccurate ingredient lists. This would be an issue because of allergy concerns
"Undated (WJRT) -- (01/26/06)-- Aunt Jemima "Homestyle" low-fat waffles and cinnamon french toast bearing certain "use by" dates are being recalled by the manufacturer.
Pinnacle Foods Group is taking the action because the products contain eggs and that information isn't listed on the packaging. This poses a serious health risk to people who are allergic to eggs.
The 20-ounce waffle cartons have a "use by" date of November 17, 2006 or after. The 12.5 ounce cartons of french toast has a "use by" date of June 12, 2006 or after"

Damn! I just bought the humongous food service sized two pack at BJ's Wholesale club this weekend and made a batch for the kids just yesterday...
In "CorpoSpeak" that comment means they are trying to get their story straight, shred any pertinient files, tamper with evidence and pay off anyone they need to so they can cover their as-es in case someone sues them or DIES from using the tainted product.

That, IMO, is a rather curious statement.
There are a lot of recipes on the internet for homemade pancake mix, too -- this one looks pretty good. Or you can easily take a recipe like Pasketti's and convert it into a mix by making five or six batches of the dry ingredients and storing it for later use. It helps cut down on your prep time.
I just ate some of these this morning. They are saying the expiration dates are between Feb 8 and Feb 23. So they would already be expired. Scares me they won't say what's wrong with them. Either way, I'll NEVER buy them again.

The Quaker Oats Co. announced the products in the recall are a small quantity of Aunt Jemima Pancake & Waffle Mix: Original, Original Complete and Buttermilk Complete, which may have potential salmonella contamination. No other Aunt Jemima, frozen Aunt Jemima or Quaker products are affected.
The products, sold in 2 pound and 5 pound boxes with Best Before dates of FEB 08 09 H through FEB 16 09 H stamped on the top, contain the following UPC codes:

Quaker is in the process of recovering the product involved. Quaker knows specifically to which customer warehouses the product was shipped. Approximately 98% of the product is within Quaker's control. The 2% of product which is outside of Quaker's control was shipped to a limited number of retail and mass merchandiser stores (no direct distribution to West Coast). Of that small quantity, the vast majority likely has not been placed on store shelves. Product was shipped to 17 states including Texas, Georgia, Alabama, South Carolina, North Carolina, Illinois, Florida, Missouri, Minnesota, Colorado, Wisconsin, Ohio, New York, New Mexico, Kansas and Utah.

wow, im surprised at how many people here actually just bought a box this weekend. its popular stuff i guess? i myself just purchased bottle of "Batter Blaster" - it's a whipped cream-like can of pre-made organic pancake batter. you just shake it up and squirt it right into the pan! and its delicious with fresh blueberries.
Boo to you 'from scratch' people- who really wants to make pancakes from scratch when you roll out of bed hungover and starving on a Sunday morning? Well, not me, for one. If I've ever been composed enough to make something with 8 ingredients before breakfast, then I might as well go out for food. I love the instant mix- it's handy to make pancakes for one person without worrying about wasting eggs or melting butter or having buttermilk on hand.

On a completely unrelated side note, I had three great-great-great-great-great aunt Jemimas. None left me a pancake recipe though :(

My son ate these pancakes on Saturday and Sunday, then had diarrhea Sunday and Monday. I'm betting it's not a coincidence.
Probably about a year or so ago there was a warning not to buy out of date pancake mixes. (I remembered it because we have a salvage food store here in town and I used to buy it there occasionally.) Something about the mix of the certain type of ingredients in it can be really bad for you when they turn rancid or moldy. Maybe the whole batch under the recall date has turned bad?
err, mix is even too much work for me. I just buy the pre-made frozen ones, throw them in the microwave for 30-45 seconds and im done. no mess, no prep, no bs.
We bought a box of this product Sunday, but the expiration date on the box is 11/30/08, not the dates they mention in the recall notice someone posted above. So, I guess (hope) we are good.
And when you have an 8 month old who doesn't sleep through the night but like to keep a family tradition of pancakes or waffles on Saturday morning (for the adults, not the kid yet) these easy mixes are perfect. Add some chocolate chips and they taste great.

I suspect the recall is because they box it in a plain cardboard box with no sealed liner. The box is not vacuum sealed. Susceptible to almost anything !!
Not only can you make your own pancakes, but you can make your own pancake MIX. Costs half as much as commercial mix, and typically has more calcium. Get a large (5 lb.) airtight container and mix:
12 cups flour
2 T. salt
3/4 cup baking powder (most of a standard Arm & Hammer package)
3/4 cup sugar
4 cups powdered milk
Store in large container.
To make, combine:
1.5 cups pancake mix
1 egg, beaten
1 cup water
2 T. melted fat or oil
--any added fruits, nuts, etc.
Combine all ingredients. Fry on hot, ungreased griddle or frying pan. Serves 3-4. Or serves 1, if that 1 is my husband, who if he is what he eats, is primarily composed of pancakes and ketchup.
I tape the "to make" instructions to the side of the big tupperware container that holds the mix so he doesn't even have to find the cookbook.
A couple further hints:
Replace 1/3 of the flour with whole wheat flour, buckwheat flour, oatmeal, cornmeal, or rye flour. (Use rye flour mix w/in a month.) Whole wheat makes it healthy!
To halve the recipe, you have to use egg beaters, since you can't really use half an egg. But in the alternative, save the spare pancakes and put them in the toaster oven broiler with a slice of swiss cheese on top until it's just melting -- very nice snack or easy breakfast.
